In addition to Castel del Monte, the great cathedrals, picturesque trulli and expanses of olive trees, there is a Apulia that still survives, unchanged over the centuries, linked to families who were able to preserve their traditions. You can admire a messapian grave in a private garden of Lecce, have breakfast with cheeses produced in a fortified farm inhabited by peasants, to be received in a castle in Salento or in a convent nearby the sea that since the eighteenth century it housed famous travelers.
